Now that we’ve made it through Christmas, many of us are dealing with the results of overindulgence (unfortunately, I am writing from personal experience). If this describes your current state and you need to attend yet another family gathering or holiday party (New Year’s Eve, perhaps), I have an easy to make dessert recipe that is also sugar and guilt free. Chocolate Mousse Pie
Serves 8-10
Ingredients:
2-4 tablespoons organic half and half
1/3-1/2 cup powdered erythritol (to taste)
2 cups organic ricotta cheese
1 teaspoon pure vanilla extract
1/8 teaspoon pure stevia extract (Sweet Leaf brand tastes great)
9 tablespoons unsweetened cocoa powder
1/4 teaspoon coarse sea salt
Preparation:
-Put half and half, erythritol, ricotta, vanilla, stevia, cocoa, and salt in blender or Magic Bullet
-Blend until perfectly smooth
-Taste filling and add more stevia, if necessary
-Spread filling into a pie plate and chill until firm
-Top with stevia-sweetened fresh whipped cream (3/4 cup), piped from a zip top bag with the corner cut
-Grate 85% cacao chocolate over whipped cream, if desired
