One treat that I love to make is Chia Seed Pudding. This healthy dessert (or snack) is a quick and easy way to satisfy your sweet tooth without added sugar. And bonus: it’s loaded with protein, fiber, and healthy fat.

Ingredients:
3-4 Tablespoons of Chia Seeds
1 Cup of Unsweetened Almond Milk
Monk Fruit or Stevia, to Taste
Directions:
– Pour all ingredients into a mason jar or bowl.
– Whisk mixture until the chia seeds are well incorporated.
– Refrigerate for 30 min and then whisk again.
– Cover and put the mixture in the fridge to set for 1-2 hours or overnight.
– Once set, if the pudding is not thick enough, add a bit more chia seeds (1 teaspoon to 1 tablespoon), whisk, and refrigerate for another 30 minutes.
